One Pan Wonder
So take a hunk of fish, some veggies and a pan. Then let’s make a meal. Got it? Ok…
Recipe
1 Tablespoon Olive Oil
1 six ounce piece of fish, preferably stealhead or salmon
2 spears of large asparagus
1 strip of bacon
1 large mushroom
Heat oven to 375 degrees
Heat medium sized non stick pan over medium heat. Then add the fish, skin side up and cook for one minute. Slice the asparagus, mushroom and bacon.
While fish is cooking add the bacon and let it crisp. About another minute. Then add the asparagus and mushroom.
Sprinkle it all with salt and pepper. Then bake in the oven for 5 minutes. Do not flip the fish.
Remove from the oven and peel the skin off. Next remove the fish from the pan and place on the plate. Then add 1/8 cup of white wine and “deglaze” the pan. Let reduce until thick. Toss veggies in sauce and place on the fish.
Enjoy a one pan wonder meal.
